anyone tried to do this. our annual boat parade id Sat Dec 8. it's a pretty big party around here and we always have folks over for deer chili and drinks---oh yeah, and the boat parade. i did a deer chili week before last, so i'm doing a gumbo this year and have read that pre smoking the goose gives it a great flavor. goose, sausage and oysters. any pointers? thanks.
